Saltine Cracker Toffee

I've had this couple of times as part of a cookie platter during Christmas. I've always love it. It's rather sweet but if you have a sweet tooth like mine, it's very yummy!!

It's very very easy and quick to make and most of the ingredients might be already at your house so if you're suddenly in the mood for something sweet, you can whip this up in 15 minutes or less. Definitely need to share or freeze because it so good, it'll be hazardous to your health. (yes, you can freeze it!)

Method:
Grease a big sheet. I used a jelly roll sheet. Then lay 40 Saltine crackers in the pan, right side up. I used Premium Plus.


Mix 1cup of butter and 1cup brown sugar in a saucepan.


Let it boil for 3 minutes.


Pour on sugar mixture on the crackers. I found it quite hard to pour evenly but I guess it doesn't matter since it'll be completely covered in chocolate very soon.


Bake in a pre-heated oven at 375F for 5 minutes.

Remove from oven and sprinkle semi-sweet chocolate chip immediately.



Let it sit a few minutes then spread chips evenly. It will spread like peanut butter on toast. Because the chocolate is spread evenly, it doesn't really matter if the sugar mixture is so even (at least that's my opinion).


I sprinkled ground pistachio nuts on half of it and left half without nuts. Let it cool and voila! Enjoy!

Store in an air tight container. You can freeze it and enjoy it when you get the sweet muchies!!

Warning:
It's so addictive that you might eat it all or since it's so easy to make, you might it too often.

Update: OMG! It was even better today. I ate so many pieces, I think I may have to go for a walk! I noticed that the crackers that had the sugar/butter mixture had a soft texture. It almost tasted like graham crackers. The crackers without but still had chocolate was crunchy but still very good.

It's quite popular for a light meal and it's sweet pies seem popular. I see many people ordering and even though I've been there twice, I've never had pie there.

Underworld 4 set

I went outside for Earth Hour and they were filming a scene for Underworld 4-New Dawn. It's set to be released in Jan 2012.

Here is the camera filming a rusty van with Kate Beckinsale look alike with similar hair and latex costume (or maybe it was her but I doubt it)



Here's the rusty van. I couldn't get a good picture cos it moved so fast.


Then I heard a crash. We weren't sure if that was suppose to happen because the camera focused on the van and not other cars. Another person watching said it's probably part of the plan.



Can you see the taxi hitting another car on the right of the picture??


Well as I was leaving I overheard that there was a mistake, either the car was suppose to explode or wasn't suppose to be hit, so they'll have to film it again at 2am.

What was bad about this was they were filming during Earth Hour. Nothing wrong with filming on Earth Hour except the following:

- Huge bright lights that consume A LOT of electricity were used. You can see bright the lights are in the pics
- Used a lot of water to make the road wet
- Has at least a dozen cars sitting idle with the engine on. There was one car that was old had fumes coming out.

Not really good for Earth Hour!!! Quite disappointed with that.

Earth Hour

Today, March 26th, at 8:30pm your city time is Earth Hour. What this means is that everyone at that time zone will turn off all electrical items, including light, computers, phones, tv etc for 1 hour. It's a move to encourage being aware of conserving. As well if lots of people participate, that 1 Hr will make a difference in the world's electrical use.

I'm not sure how long this has been done but I've participated for 3 years. It's pretty cool. The first year I walked around downtown. It was kinda cool to see big corporations participating. The light signs for big banks were turned off, as well as their building. Very cool!!

Another year, I just stayed at home on my sofa in the dark. It was also a very nice experience because you can be awake but enjoy the stillness, peace and darkness.

This year I'll probably walk outside just to see more corporations participating. Maybe I'll see you outside walking in order to be part of Earth Hour.

"Land of Nod" Cinnamon Bun

I had this a long time ago. My mom's coworker made it and shared it with us. Though she gave the recipe and it was very easy recipe, we never made it. Not sure why.

I recognized this recipe in my recipe book The Best of the Best and More. I finally made it. This bun is sometimes known a Monkey Bread.



This recipe is not 100% homemade from scratch but it's freshly made. It's very easy and was a nice breakfast, especially when it came out of the oven!!!

Looks Nasty!!

Went to a Japanese all you can eat. Generally Toyama Restaurant is pretty good for all you can eat Japanese. That's why they are almost always very busy.

This Friday I ordered gommae which is peanut sauce with spinach. I usually enjoy this but this time it looked like:



Doesn't that look so nasty? To me, it looked like a feline having some major stomach problems. Sorry to disgust my readers but that's what it looked like. I only ate one bite and couldn't eat anymore. Nothing wrong with the taste but my mind kept going to that nasty thought. It's all in the mind but the mind is so powerful that my taste buds couldn't overcome my mind.

I guess they should serve this in a competitive reality show and see how the contestants react!!

Condolences to the people of Japan

It was very shocking to hear about the earthquake, tsunami and now nuclear problems in Japan. I know that many deaths are expected but I hope that it be as minimal as possible and rescuers will be able to save lots of people. Take care and stay strong!

Bad Bread Day :(

I made bread yesterday - a Rustic Italian Bread and Everyday sourdough. I decided to make bread because I ran out of bread and felt like baking.

It was a bad bread because I didn't read the instructions fully and missed a step in each recipe.

Rustic Italian Bread
Rustic bread or artisan bread often require more than 24hrs to make them. In this case, it was no different. I had to make a sponge the night before. A sponge is a yeast mixture that is allowed to ferment or rise overnight. This is suppose to make the texture of the bread better and the bread more tasty.

After 24hrs, it should look like this. Nice and bubbly!

High Tea at Urban Tea Merchant

For those who have looked at my pictures on Facebook, you'll realize I love high tea. When I was young, my mom would serve us high tea with her nice tea sets or use the children tea sets I owned. It was so fun!

Anyways, in my Facebook I talk about having high tea at Shangri-la Hotel and my thoughts on it.

Well today I went to Urban Tea Merchant for high tea.



I've been there just for tea and enjoyed it very much. I really wanted to have high tea but never had the chance and couldn't justify $48+tax for their Signature High Tea.
